Yakiton, meaning “grilled pork,” is a popular Japanese skewered dish traditionally enjoyed at izakayas and casual street-side eateries. In this version, pork skewers are grilled until lightly charred and brushed with Ahh Maa Donburi Sauce, creating a glossy, rich finish with subtle sweetness. The skewers are served alongside fluffy short grain rice and bright pickled daikon to cut through the richness. The meal is completed with a comforting bowl of miso soup made with soybean paste, dashi, tofu and wakame. A classic pairing in Japanese home-style dining. Finished with roasted sesame seeds for aroma and texture, this dish delivers warmth, balance and satisfying depth in every bite.

Cooking Instructions

1. Cook Rice

Rinse the rice under cold water until the water runs clear. Add the rinsed rice and the appropriate amount of water to your rice cooker. Each packet contains 2 cups of rice.

Don’t have a rice cooker? Rinse and drain rice. In a pot, bring water to a boil (3 cups for 2 servings / 6 cups for 4 servings / 9 cups for 6 servings). Add rice, stir once, cover, and reduce heat to low. Simmer until water is absorbed and rice is tender (12–15 min / 15–18 min / 18–20 min). Remove from heat and let it sit while covered (10 min / 10–15 min / 15 min).

2. Prepare Garnishes

Dice the firm tofu into ½ cm cubes and set aside. Finely slice the Yellow Pickled Radish (Takuan) and set aside for garnish.

3. Prepare the Miso Soup Base

In a small saucepan, heat water (500ml for 2 servings / 1L for 4 servings / 1.5L for 6 servings) over medium heat until gently simmering. Reduce to low heat, add the Dashi Powder and stir until fully dissolved. Add the soybean paste and stir until completely smooth.

4. Finish the Miso Soup

Add the diced tofu and simmer gently for 5 minutes. Add the cut wakame, bring back to a light simmer, then immediately remove from heat to prevent overcooking.

5. Cook the Pork Skewers

Stovetop/Grill – Recommended: Heat a grill or frying pan over medium-high heat. Cook the pork skewers for 2.5–3 minutes per side, turning until evenly golden brown. Turn off the heat and remove the skewers from the pan. Brush generously with Ahh Maa Donburi Sauce, then return the skewers briefly to the hot pan (off heat), flipping for a few seconds on each side to allow the sauce to caramelise using residual heat.

OR

Air fryer: Preheat the air fryer to 200°C. Cook the pork skewers for 6–7 minutes, turning once, until golden and cooked through. Brush all sides with Ahh Maa Donburi Sauce and return to the air fryer for an additional 30 seconds to caramelise.

Tip: Cook meat in batches in a small air fryer or pan to ensure even cooking and proper char. Avoid overcrowding to prevent uneven results.

7. Plate the Skewers

Arrange the cooked pork skewers on a serving plate. Drizzle with extra Ahh Maa Donburi Sauce and sprinkle with roasted sesame seeds.

8. Serve & Enjoy

Serve the yakiton with steamed short grain rice, miso soup, and sliced yellow pickled radish (takuan) on the side. Drizzle additional Donburi Sauce over the rice if desired and enjoy immediately.
